There's a Lot More to a Restaurant Than What Happens at the Table

We recently got to trade our usual lunch crowd for a classroom when we welcomed a group of Brandon Valley High School students into 212 for a behind-the-scenes restaurant experience.

The goal was simple: show students what actually happens before a plate of food ever reaches the table.

Students got an inside look at the different pieces that keep a restaurant running, from the kitchen and food-safety practices to guest service, communication and the importance of consistency.

They toured our restaurant and commercial kitchen, learned more about restaurant operations and got the chance to see how the front and back of the house work together during a normal day.

Then we headed to the bar.

Using syrups, juices, soda and other non-alcoholic ingredients, students got a hands-on look at drink building and why measurements and consistency matter. It was a fun way to demonstrate something that applies far beyond bartending: when guests order the same thing twice, they expect the same experience twice.

Of course, everyone got to sample the mocktails too.

We loved having the opportunity to open our doors to local students and share a side of the restaurant industry that guests don't normally get to see.

A big thank-you to Brandon Valley for spending part of the day with us. We can't wait to have you back.
